Green Lentils and Pumpkin and Chickpeas Stew

 

There are few better ways of providing a Heartening and Fulfilling Meal than the ones which boost Nutrition and at the same time are light on the Stomach and the Digestive system. Vegetables coupled with Chick Pea and Lentils are a Good Source of Micro Nutrients as well as the much needed Fibre.

The stew is a GOOD and HEALTHY source of Carbohydrates, Proteins, Calcium and Iron and as per requirement the Healthy Fat content can be boosted by using a teaspoon of Extra Virgin Olive or Coconut Oil per helping.

 

 

Method:

  • Soak Chickpeas overnight and soft boil.
  • Soak Lentils for at least two hours and add three cups of water and simmer on slow fire along with all Vegetables for half an hour.
  • Add Boiled Chick Peas after fifteen minutes.
  • Add half teaspoon Haldi and Salt to taste.
  • Add Juice of at least half a Lemon and Chopped Mint and Coriander to add Flavour, Color and of course the Health Benefits that go with them!!

 

This makes a big and extremely satisfying moderate on calories (which as suggested above can be boosted by adding Healthy Fats or Almond Paste or powder.) Bowl of Stew!

 

Note/Tip:

Consistency can be altered depending on taste and requirement.

While boiling the Pot or the pan should be semi covered for Best Cooking results.
